About this deal

Everything is geared up to produce a fruity, pure spirit, from the unpeated local barley to the two types of yeast used (for all the whisky geeks out there, they are Anchor and Safwhisky M1). Fermentation takes between three and five days and, according to Peter Holroyd, the distillery manager, the two yeasts produce lots of “fruit esters”. When it comes to distillation, he takes a very narrow cut from the 4,500 litre spirit still to ensure a light, clean spirit with no heavy elements.

MoM: So you’re clearly thinking very long term about it. How do you feel about the future of Scotch whisky, because obviously at the moment it’s on something of a high? MoM: There’s quite a lot of distilleries that have opened, do you think there’s a chance that there may be too many at some point? On the nose: I immediately get a light and refreshing ethanol sensation. This is followed by light aromas of overripe bananas, dried apricots, pears, and papaya. In-between these are sharp and brief notes of starfruit and sapodilla. There are also underlying aromas of cinnamon, toffee, and honey. The starfruit aromas become more pronounced later while giving off subtle honeydew melon notes at the end.

The natural elements on Kingsbarns Distillery’s doorstep, combined with superior wood choice and long, slow fermentation give Dream to Dram its remarkably complex and distinctive Lowland character: light, intensely fruity, floral and balanced, with colour and richness coming from the wood. On the nose there is banana, pineapple syrup and summer berries, with a slight herbal note. There is soft toffee, custard pastry and redcurrants on the palate, with a finish of ginger syrup. MoM: Right, that must help. And do you have a lot of visitors? Because you’ve got such a great visitor centre here.The floral and fruity notes really take the centre stage even as they are very gentle. With a few minutes of careful nosing, you might detect some vanilla and slight oakiness, but this is rather subtle and could be missed. IW: Gosh. Well, we’ve been open three and a half years, so it was about an 18-month build I think, so four and a half, or five years, it must have been, at a guess. Yes, it was about five, six years. Call it six years. We were fortunate to recently have had a virtual tasting session with Kingsbarns’ distillery manager, Peter Holroyd. The distillery got its name from its location and history. Kingsbarns is a small village in Fife wherein the kings of Scotland would store their grain. The distillery started operating in 2014 and filled its first cask in 2015. Inspiration for the name of our new Single Malt came from the heart of our distillery at Kingsbarns. During the renovations of the old farmstead that began in 2013, efforts were made to restore, not replace, many parts of the historic building. One of these was its oldest space: The Doocot. First releases of many new distilleries have become so highly sought-after by whisky connoisseurs that the cost is now prohibitive to obtain many of them. This is an opportunity to taste a first release for yourself!

A long, slow production process in copper pot stills is at the heart of distillation: a 3 – 5 day fermentation period, wash stills that run for 8 hours and a slow running spirit still with high cut points. That will never change and the stills will never run any faster. How is the Lowlands’ style of Scotch whisky like? Lowlands Scotches tend to be more gentle and floral in taste and aroma. Their whisky distilleries were once unimaginatively referred to as “Lowland Ladies". Why? Firstly, their distilleries tend to triple-distill their whiskies, which makes their taste more delicate. Lowlanders are also often unpeated. Rather than using peat to toast barley, it seems that Lowlands distilleries prefer using the neutral-smelling coal to toast the barley- thereby imparting no peaty smokiness to the barley. The historical preference to use coal rather than peat is likely due to the Lowland’s strong coal-mining industry. Kingsbarns’ Dream to Dram is a single malt composed of whisky aged for at least three years in 90% first-fill ex-bourbon casks from Heaven Hill and 10% STR (shave, toast, rechar) Portuguese ex-red wine casks. According to Peter, the ex-bourbon casks currently used by Kingsbarns are all from Heaven Hill. Using STR made me ask whether Dr. Jim Swan consulted for them. Peter confirmed it. Records the default button state of the corresponding category & the status of CCPA. It works only in coordination with the primary cookie. The East Neuk enjoys high levels of sunshine, good soil and not too much rain, which creates the perfect growing conditions for barley. Every drop of Dream to Dram is made from barley harvested in these sun-soaked fields. The addition of pure, rich mineral water drawn from an aquifer 100 metres below the Distillery adds to the local character and light, fruity flavour profile of the whisky.The result is a beautifully light, clean yet complex Lowland style malt whisky which perfectly captures the essence of this quiet and enchanting corner of Scotland.
